We are perhaps a little perfectionist in that respect,&#8221; laughs Diego Mathier, owner of the Adrian &amp; Diego Mathier Nouveau Salquenen winery. The development of a new wine always takes a lot of time and patience. &#8220;We only harvest once a year. Unlike a chef working on a new recipe, we can&#8217;t start new experiments every day. In our industry, this is a process that takes years.&#8221; A process that the Salgesch wine family seems to have a good knack for, as the results are impressive.
