
As in real life, the longer the sweet madness lasts, the more beautiful it becomes. With this in mind, the Pinot Noir grapes, which are harvested from east-facing vineyards, are left to ferment on the skins for an extremely long time – an incredible 5 years – to allow the aromas to develop as fully as possible.
Diego Mathier’s wine cellar also deliberately allows a lot of time for the second fermentation – as a guarantee for the special ageing process with its own unique character. This takes place in the bottle, also known as the méthode traditionelle, in which the characteristic carbonic acid is produced and the sparkling wine develops complex aromas during a maturation period of several months on the lees. This is a process that is used for high-quality sparkling wines.
With their fine sparkle, refreshing lightness and elegant charisma, our sparkling wines symbolize joie de vivre. This zest for life and the special moments of celebration inspired us to give our wines their name: Folie à deux – that means double joie de vivre, light-footed and yet in harmony.
Like the charming bridal couple at the altar, our two variants could not be more different: the dry Brut – self-confident and clear – and the lovely sec – soft and seductive. And yet they form a harmonious duo, ready to celebrate life – whether for a wedding, a birthday, professional success or by candlelight in the bathtub. It’s always time for a glass of joie de vivre!
