Recipe for 4 people
An autumnal menu. With this recipe, you are sure to succeed with the pumpkin cream.
Preparation of pumpkin cream
- Peel, deseed and finely chop 300 g pumpkin (butternut or Hokkaido pumpkin), sauté in 40 g butter and deglaze with a little white wine.
- Add 7.5 dl chicken stock.
- Add a teaspoon of lovage and 15 g of Amaretto and season with a little salt and nutmeg.
- Cook everything until soft. Then puree and strain.
- Finally, add 150 g cream and 40 g butter to thicken the pumpkin cream.
