New vintage is a dream vintage
The cellaring of the new 2022 vintage in the Adrian & Diego Mathier Nouveau Salquenen cellar is in full swing. The video begins with ChloĂ© Cotter-Pernet, who works in the cellar for the Mathier family. She carries out what is known as pigeage on the new Cornalin vintage. This refers to the manual pressing of the grape skins during mash fermentation. Pigeage improves the extraction of the color and tannins contained in the grape skins. Afterwards, long-time head oenologist and cellar master CĂ©dric Leyat takes a sample of the new 2022 vintage to taste the quality of the cellared Cornalin together with Diego and Nadia Mathier. Diego Mathier is also enthusiastic about the first tasting of the new vintage, which is still in the fermentation process. The impressive density of the young wine with its dark, intense color and pronounced tannin structure is striking. Although the harvest of the new 2022 vintage is still in full swing in the Valais wine village of Salgesch, Diego Mathier has already made up his mind after the first tastings: “2022 will be a dream vintage”. In any case, Nadia Mathier is already looking forward to presenting the new vintage to friends of Mathier wines at the trade fairs and in Salgesch, Hochdorf and Interlaken.
