The most important facts in brief

The fine art of producing unique top-quality wines in Valais

For a better understanding and appreciation of what it takes to make a top-quality wine, it can be compared to the preparation of a top-quality meal.

Both are initially created in the mind – the menu by the chef, the wine by the winemaker – because it is here in the mind that the vision of what will later provide the greatest pleasure is created. In other words, the individual ingredients are combined in advance in the mind and the subsequent top-quality product is composed into a great whole.

Then, of course, you need a whole range of ingredients of the highest quality. In viticulture, this is the grape variety, you will say. Of course it is. But you also need (among many other things) a top-quality vineyard site with the perfect terroir to make a top wine. And then, of course, experience and craftsmanship – both in the kitchen and in the vineyard or wine cellar – are essential.

Without wanting to deny the art of gastronomy, both differ in two central and all-important elements. Firstly, there is the special nature of the terroir as an ingredient. Only winegrowers with top vineyards have the chance to continuously produce top wines of the highest quality. But the terroir, i.e. the vineyards, cannot simply be bought like a top-quality fillet of beef or all the other foods needed for an exquisite meal. Vineyards are a tradition and family history that has been passed down through generations and are therefore something unique and long-lasting. And secondly, the chef has the undisputed advantage that he can practise and prepare his menu to perfection as often as he likes. The winegrower, on the other hand, has this opportunity to produce a top-quality product exactly once a year. This alone says a lot about the value of top wines and the preciousness that a wine lover experiences when enjoying such a drop of the highest quality in a glass.

It is precisely these top wines of the highest quality that are the embodiment of the life philosophy of the Adrian & Diego Mathier Nouveau Salquenen AG winery. The three-time best Swiss winery of 2018, 2011 and 2007 has always been uncompromisingly and consistently committed to presenting top wines of inimitable quality and unique drinking pleasure in the glass.
