Recipe for 4 people

An autumnal menu. With this recipe, you are sure to succeed with the rosemary panna cotta.

Preparation Rosemary panna cotta

  1. Soak 4½ sheets of gelatine according to the packet instructions.
  2. Bring 80 ml milk, 200 ml cream and 2 tbsp chopped rosemary to the boil in a pan, remove from the heat and leave to infuse for 10 minutes.
  3. Add 100 g chopped white chocolate and melt while stirring. (If the liquid is no longer warm enough for this, heat again briefly).
  4. Add the gelatine and stir to dissolve. Then pour the mixture through a sieve to remove the rosemary.
  5. Stir in 150 g Greek yogurt.
  6. Pour the mixture into cold-rinsed (not dried) jars and leave to set in the fridge for at least 4 hours.
4½ sheet Gelatine
80 ml Milk
200 ml Cream
2 TBSP. chopped rosemary
100 g chopped white chocolate
150 g Greek yogurt

Preparation of stewed plums

  1. Halve 250 g of plums, remove the stone and cut into slices.
  2. Heat 20 g sugar in a pan until it melts and caramelizes.
  3. Add 2 tablespoons of water together with the plums, cover and simmer until the plums break down slightly.
  4. Leave to cool and serve with the panna cotta.
  5. Garnish the dessert with summer berries as desired.
